There are about 5,000 varieties of potatoes in the world and more than 4,000 grow in the Andean highlands of Peru, Bolivia, and Ecuador.  Bred selectively over centuries for their taste, texture, shape and color, they are very well adapted to the harsh conditions that exist high in the Andes, at altitudes of more than 11,000 feet.  Thought to be originally domesticated in Peru across multiple independent locations thousands of years ago, today it’s the fourth largest food crop in the world and a staple for billions of people.  In Arequipa, we were recommended to try a small local restaurant that serves up dozens of spuds along with imaginative sauces and toppings.  Definitely a tasty and filling meal, we sampling the white, pink, yellow, brown, and purple colored tubers topped with a sauce that was just right.

Dessa estatística, são mais de 4.000 tipos que pertecem somente  essa área do Peru. Cada uma com seu distinto sabor, textura, forma, cor e crescem na altura da cordilheira. Há 521km de Cusco, já chegamos em Arequipa. Uma cidade tranquila, rodeada por vulcões e famosa pela criatividade que os chefes de cozinha utilizam suas batatas. Experimentamos um restaurante local, e olhem só que prato mais bonito e apresentável! Definitivamente uma refeição saborosa, com um pouquinho de cada batata além do molho inesquecível de topo.
