Virado à Paulista

Just as the national dish of Feijoada is served up in restaurants on Wednesdays and Saturdays, the Virado à Paulista is a typical dish available on Mondays.  Loosely translated to something like “upside down the Paulista way”, the gigantic plate of food is best eaten on an empty stomach.  It’s composed of traditional homemade food for the state of São Paulo and includes rice, beans thickened with corn flour and a special sauce that includes extra lard, sausage, fried eggs, collared greens, crunchy pork skin strips, and a pork cutlet.  Each restaurant has its own variation and ours included a fried banana dessert that pushed things over the top for us.  It’s estimated that about half a million of these plates are served every week just in the restaurants in São Paulo so we were among the many enjoying this hearty plate at a nearby neighborhood café.

Assim como o prato nacional de feijoada é geralmente servido às quartas e sábados, eu até já tinha me esqueçido que Virado à Paulista é tipicamente esperado pelos Paulistas às segundas-feira. E para começar a semana bem light, fomos na padaria aqui próximo da casa da minha mãe para comer um arroz, feijão, bisteca de porco, linguiça, ovo frito, torresmo, couve e uma banana milanesa de brinde. Interessante saber que mais de meio milhão de pratos são vendidos a cada semana somente no estado de São Paulo. Geralmente o feijão de virada paulista  é feito com a mesma gordura onde o torresmo é frito, por isso o gosto maravilhoso. Porém, o nosso estava uma cor meio esbranquicada e eu não soube dizer se era por causa da farinha de milho, ou se tinha um molho especial ou se era a pura banha mesmo. Dieta aqui no Brasil, por enquanto, ficará difícil… semana que vem pensaremos nisso!
